Wild Boar Sausage
We went to Norcia, in Umbria last week, and brought back the best sausage I have ever eaten.
We stayed in a very nice agriturismo: Il Casale de gli Amici (The Friends House, I thought the name was a little cheesy, until I learnt that Amici, friends, is also the name of the owners). We had dinner there, good but not great, except for one sausage that was really excellent. It turned out to be home made Salumi di Cinghiale: wild boar sausage. And best of all we could buy some!
Saddly enough there is not much left...
